Makes: 4 servings
2 slices Love’s bread
1/2 cup grated cheddar
1/4 cup kimchi, drained and roughly chopped
2 tablespoons mayonnaise
1. Heat a cast-iron skillet over medium heat.
2. Top 1 slice of bread with 1/4 cup of the cheese, kimchi, the remaining 1/4 cup cheese and then the other slice of bread.
3. Spread 1 tablespoon of the mayonnaise over the top slice. Place in the skillet, mayonnaise side down, and cook for 3 minutes, pressing slightly to flatten.
4. Spread the remaining tablespoon of mayonnaise on the top slice of bread, flip and cook until golden, another 3 minutes. Quarter the sandwich and serve.
